All alone here tonight too.  The girls are in Cali.  I just got back to the islands, and yep, it's still paradise.  Though perhaps I am just high on coconuts.

Umm, wonderful indeed, and I know a great avocado salad recipe. Let me see if I have it.

Ok just take an avocado cut it into small pieces
chop a stick or two of crunchy celery finely,
chop up some nice sun dried tomatoes,
a cup of frozen corn thawed,
a tomato chopped and the juice drained somewhat,
some chopped corriander leaves,
juice of one lime,
a dash of cumin powder,
salt to taste,
a pinch or less of chilli powder,

Mix all of it in a bowl, chill and serve. 

ps Make sure you don't mash the avocado like in guacamole, it should be in pieces, and enjoy!

Sounds cool. I simply had a most amazing week and now alone for a day or two.  Tomorrow(actually today for us, here, already) I might go out for a little shopping and spend the rest of the day doing nothing.

Tomorrow is a shopping day here too. Heading over to Whole Foods to stock up on some psuedo essentials, and then hitting the fruit stand on the way back for the real goods.

I love the whole foods stores.  I assume you also find good strawberries, blue berries, raspberries in this time of the year as well.  I love berries.

I just polished off two huge flats of raspberries in two days. Been eating tons of papayas and avo since I have been back, and sucking down 6-10 coconuts a day too.

I haven't drank a glass of water in years. We actually have the best tap water in the whole country here but nothing compares to young coconuts.  I assume you have had a few yes?

Oh yes, I've had plenty in my life time, and nothing beats the water and meat of the young cocnuts...simply mouth wateringly so...

Hawaiian coconuts taste much better to me than the mainland kind that are shipped in from Thailand. They are a tad too sweet and they taste metallic....probably from the stuff they dip them in to keep them white.

True, I never really have them and it's been a long time since I've had those fresh ones fresh from the trees.  You're lucky!

If you see a white coconut on the mainland, it's been dipped in SO2 or formaldehyde. I still drink them on occasion, but not as often.  Whole foods sells frozen coconut water that I prefer to buy when on the mainland...it doesn't have the metallic taste.

Bella drinks at least a quart a day too.

They just opened up a new health food store in Fairfax CA.  The whole store is organic stuff, non GMO and it's as big as whole foods. For a small town it is unreal.

That's sweet to know bella drinks it too.  :-) I know the whole foods store has coconut water in a carton, the frozen one I'm not aware of, but will check for it next time around.  I make this drink esp in summer times with coconut water, celery sticks, mint, ginger, apple and lemon juice, it's delicious.

At the farmer's market they have two organic whole foods stores and are always busy.  I love their organic extra strong cheese, hummus and apple cider vinegars...

We do a lot of shakes with raw cream when I am in Cali.  I can't get raw cream here. I make a basil ice cream from scratch....it is beyond beyond.
